  1. Sprinkle both sides of the chicken with salt and pepper. Place in a baking dish.
  2. In a small saucepan, combine the remaining ingredients except the rosemary. Warm the olive oil and spices over medium heat, stirring, until you begin to smell the garlic, about 2 minutes. Remove from heat.
  3. Pour the infused oil over the chicken. Sprinkle with the rosemary, if using.
  4. Bake in a preheat 400-degree F oven for about 20 to 25 minutes if using boneless chicken and about 40 to 45 minutes if using bone-in. Paste occasionally with the oil.
